Cauliflower Potato Salad Recipe

Ingredients
  

  • 1 large head cauliflower, cut into bite-sized florets
  • 2 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped celery
  • 2 tbsp chopped fresh dill, divided
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • Paprika for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add cauliflower and cook until fork-tender, 5 to 7 minutes. Drain, rinse under cold water, and drain well.
  2. Chop the hard-boiled eggs, red onion, and celery into small, even pieces.
  3. In a large bowl, whisk together mayo, mustard, vinegar, salt, and pepper until smooth.
  4. Add the cauliflower, eggs, onion, celery, and 1 tbsp dill to the dressing. Fold gently until coated. Cover and refrigerate at least 30 minutes.
  5. Scoop into a serving bowl, sprinkle with the remaining dill and paprika, and serve.

Notes

For best flavor, chill at least 30 minutes before serving. If you don’t have hard-boiled eggs on hand, boil them while the cauliflower cooks.
