Ingredients
Method
- Heat 1 tsp oil in a large skillet over medium-high. Scramble eggs until just set, then transfer to a plate and wipe the pan.
- Add remaining oil to the pan. Sauté carrot, white parts of green onions, garlic, and ginger until carrot is crisp-tender, about 3 minutes.
- Add cauliflower rice and peas. Spread into an even layer and cook without stirring for 2 minutes, then stir and cook another 3 minutes until golden in spots.
- Return eggs to the pan, breaking them up. Drizzle in soy sauce and sesame oil, toss to combine, and fold in green onion tops. Add salt and white pepper to taste and serve immediately.
Notes
This recipe comes together fastest with pre-riced cauliflower from the store. If you’re starting with a whole head, pulse the florets and squeeze out moisture well. It’s best eaten fresh but tastes great the next day recrisped in a skillet.
