Ingredients
  

  • 1 lb ground beef (85/15)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles, undrained
  • 2 cups shredded cheddar cheese, divided
  • 1 box (8.5 oz) corn muffin mix
  • 1 can (14.75 oz) cream-style corn
  • 1 large egg
  • Fresh cilantro, chopped (optional)

Method
 

  1. Preheat oven to 375°F (190°C). In a large oven-safe skillet, brown ground beef over medium-high heat, about 6-8 minutes. Add onion and bell pepper, cook 4 minutes. Stir in garlic 30 seconds. Drain fat.
  2. Add taco seasoning, beans, corn, tomatoes with green chiles, and 1 cup cheddar. Simmer 2-3 minutes.
  3. In a bowl, stir corn muffin mix, creamed corn, egg, and remaining 1 cup cheddar just until combined.
  4. Transfer beef mixture to a 9x13-inch dish (or keep in skillet). Spread cornbread topping evenly over the filling. Bake 25-30 minutes until golden and a toothpick comes out clean.
  5. Let rest 5 minutes. Garnish with cilantro if desired, then slice and serve warm.

Notes

If the cornbread top browns too quickly, loosely tent with foil for the final 10 minutes. The casserole slices more cleanly after a brief rest.
