Cast Iron Skillet Cookie Recipe

Ingredients
  

  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup semisweet chocolate chips or chunks

Method
 

  1. Preheat oven to 350°F (175°C). Whisk melted butter with brown sugar and granulated sugar until smooth and glossy, about 1 minute.
  2. Whisk in egg and vanilla. Fold in flour, baking soda, and salt until just combined, then stir in chocolate chips.
  3. Press dough into a lightly greased 10-inch cast iron skillet. Bake 22 to 25 minutes, until golden and edges pull away from the sides.
  4. Cool in the skillet on a wire rack for 10 minutes, then slice into wedges and serve warm with ice cream.

Notes

If your skillet is new or not well-seasoned, rub it with a little oil and warm it for a few minutes before greasing so the cookie releases easily. Bake times may shift by a couple of minutes depending on your oven, so check early the first time you make it.
