Cast Iron Chicken Breast Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts, about 8 oz each
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Method
 

  1. Pat chicken dry and pound to an even ¾ inch thickness. Season both sides with salt, pepper, and garlic powder.
  2. Heat a cast iron skillet over medium-high for 3 minutes, add oil, then place chicken smooth side down. Sear 5 to 6 minutes without moving.
  3. Lower heat to medium, flip, and cook 4 to 5 minutes more until internal temp reaches 160°F to 165°F.
  4. Rest the chicken on a cutting board for 5 minutes, then slice against the grain and serve.

Notes

If you don't have a thermometer, cut into the thickest part of the breast after resting. The meat should be opaque white with clear juices. Any pink means it needs a couple more minutes in the pan.
