- Heat oven to 350°F (175°C) and line a 9x13-inch pan with parchment. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, whisk oil and both sugars, then whisk in eggs and vanilla. Stir in dry ingredients, then fold in carrots and walnuts.
- Beat cream cheese and sugar until smooth. Mix in egg, vanilla, and sour cream on low until uniform.
- Spread carrot batter in pan. Dollop cheesecake on top and gently spread. Swirl with a knife in a figure-eight motion.
- Bake 35 to 40 minutes until edges are set and center has a slight jiggle. Cool completely on a rack.
- Refrigerate at least 4 hours. Lift out, slice into 16 bars, and serve cold.
Notes
Chilling is not optional, it sets the cheesecake so the bars slice cleanly. For the neatest edges, chill overnight. If you want a little crunch on top, scatter a few extra chopped walnuts over the cheesecake before baking.
