- Whisk together the lime juice, orange juice, soy sauce, olive oil, garlic, 1/4 cup cilantro, cumin, salt, and pepper. Place the flank steak in a dish, pour the marinade over it, and turn to coat. Cover and refrigerate for 1 to 4 hours.
- Preheat a grill or grill pan to high heat (450°F to 500°F). Remove the steak from the marinade, pat it dry, and lightly oil the grates. Grill for 4 to 5 minutes per side for medium-rare, or until the internal temperature reaches 130°F to 135°F.
- Let the steak rest on a cutting board for 5 to 10 minutes, then slice thinly against the grain.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, until pliable and lightly spotted.
- Fill the warm tortillas with steak slices and top with diced onion, chopped cilantro, and a squeeze of lime. Serve right away.
Notes
Marinating time is not included in the prep. Plan for at least 1 hour, or up to 4 hours, for the best flavor. If using a cast iron skillet indoors, cook over high heat and be ready for some smoke. Letting the meat rest is the key to keeping the slices juicy.
