Carne Asada Street Tacos Recipe

Ingredients
  

  • ¼ cup fresh lime juice
  • ¼ cup fresh orange juice
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ cup chopped fresh cilantro, plus more for serving
  • 1½ lbs skirt steak (or flank steak), trimmed
  • 12 small corn tortillas (5-6 inch)
  • ½ cup finely chopped white onion
  • Lime wedges, for serving
  • Salsa of choice, for serving

Method
 

  1. In a large bowl, whisk together lime juice, orange juice, olive oil, garlic, cumin, salt, pepper, and ¼ cup cilantro. Add steak and turn to coat. Marinate at room temperature 15 minutes, or refrigerate up to 2 hours.
  2. Preheat grill to high heat (about 450°F). Remove steak from marinade, letting excess drip off. Grill 3-4 minutes per side for medium-rare, until charred and internal temp reads 130°F.
  3. Transfer steak to a cutting board and rest 5 minutes. Slice thinly against the grain.
  4. Warm tortillas on the grill or in a dry skillet about 15 seconds per side. Fill with steak, top with onion, cilantro, and a squeeze of lime.

Notes

If using skirt steak, look for the thin, silvery membrane on the outside and trim it off before marinating. For the most authentic flavor, grill over charcoal if you can.
