Ingredients
Method
- Whisk eggs, milk, vanilla, cinnamon, and salt in a shallow dish. Soak each bread slice 20 seconds per side.
- Melt 1 tbsp butter in a skillet over medium heat. Cook soaked bread 2 to 3 minutes per side until golden. Keep warm.
- Reduce heat to medium-low. Melt remaining 1 tbsp butter, add brown sugar, and stir until bubbling and glossy, about 1 minute. Add bananas and cook 30 seconds. Add rum and simmer 30 to 45 seconds. Remove from heat and stir in heavy cream if using.
- Place two slices of toast on each plate, spoon bananas and sauce over the top, and serve immediately.
Notes
Make sure the bananas are just ripe, still yellow with no brown spots, so they soften without turning to mush. The sauce thickens as it cools, so have your plates ready before you finish the caramel.
