Caramel Bread Pudding Recipe

Ingredients
  

  • 6 cups brioche or challah bread cubes
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 2 cups whole milk
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1/4 tsp fine sea salt

Method
 

  1. Make caramel with 1 cup sugar, 3 tbsp water, butter, 1/2 cup heavy cream, 1/4 tsp salt, and 1/2 tsp vanilla. Pour half into buttered baking dish.
  2. Toast bread cubes 5 minutes at 350°F. Tumble them over the caramel in the dish and toss to coat. Rest 10 minutes.
  3. Whisk eggs, milk, remaining 1/2 tsp vanilla, and a pinch of salt. Pour over bread, press gently, and let sit 5 minutes.
  4. Bake at 350°F for 40-45 minutes until center jiggles slightly and knife comes out mostly clean. Rest 10 minutes.
  5. Spoon warm pudding into bowls and drizzle with reserved caramel. Add cold cream if you like.

Notes

Day-old bread gives the best texture, but toasting fresh cubes works well too. If your caramel gets too thick while you wait, gently warm the reserved sauce before serving so it pours easily.
