Method
- Heat oven to 325°F (165°C). Combine graham crumbs, 3 tbsp sugar, and 6 tbsp melted butter. Press into a 9-inch springform and bake 10 minutes. Cool.
- Beat cream cheese until smooth. Add 1 cup sugar, then mix in sour cream and vanilla. Beat in eggs one at a time on low.
- Cook sliced apples in 2 tbsp butter with brown sugar, cinnamon, and nutmeg for 6 minutes. Stir in cornstarch slurry and cook 1 minute. Cool slightly.
- Pour half the batter over crust, add apples, then cover with remaining batter. Set pan in a water bath and bake 60 to 70 minutes until edges set and center jiggles softly. Cool in turned-off oven for 1 hour, then chill at least 6 hours.
- Drizzle caramel sauce over the chilled cheesecake, slice, and serve.
Notes
For the cleanest slices, chill the cheesecake overnight. The apples and caramel hide any surface cracks, so even a first attempt turns out bakery-worthy.
