Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 3 tbsp granulated sugar
  • 6 tbsp unsalted butter, melted
  • 3 large apples
  • 2 tbsp unsalted butter
  • 1/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp cornstarch dissolved in 1 tbsp cold water
  • 32 oz cream cheese, full-fat, room temperature
  • 1 cup granulated sugar
  • 1/4 cup sour cream, room temperature
  • 2 tsp vanilla extract
  • 4 large eggs, room temperature
  • 1/2 cup caramel sauce

Method
 

  1. Heat oven to 325°F (165°C). Combine graham crumbs, 3 tbsp sugar, and 6 tbsp melted butter. Press into a 9-inch springform and bake 10 minutes. Cool.
  2. Beat cream cheese until smooth. Add 1 cup sugar, then mix in sour cream and vanilla. Beat in eggs one at a time on low.
  3. Cook sliced apples in 2 tbsp butter with brown sugar, cinnamon, and nutmeg for 6 minutes. Stir in cornstarch slurry and cook 1 minute. Cool slightly.
  4. Pour half the batter over crust, add apples, then cover with remaining batter. Set pan in a water bath and bake 60 to 70 minutes until edges set and center jiggles softly. Cool in turned-off oven for 1 hour, then chill at least 6 hours.
  5. Drizzle caramel sauce over the chilled cheesecake, slice, and serve.

Notes

For the cleanest slices, chill the cheesecake overnight. The apples and caramel hide any surface cracks, so even a first attempt turns out bakery-worthy.
