Canned Salmon Patties Recipe

Ingredients
  

  • 2 (6 oz) cans salmon, drained
  • 1 large egg, lightly beaten
  • 1/3 cup panko breadcrumbs
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 scallions, thinly sliced
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 to 3 tbsp vegetable oil, for frying

Method
 

  1. Drain the salmon well, tip it into a bowl, and flake apart with a fork. Add the egg, panko, mayonnaise, Dijon, lemon zest and juice, scallions, garlic, salt, and pepper. Mix until everything holds together.
  2. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick.
  3. Heat the oil in a large nonstick skillet over medium-high until it shimmers. Cook the patties for 3 to 4 minutes per side, until deeply golden and crisp.
  4. Drain briefly on paper towels, then serve right away with lemon wedges.

Notes

For the crispiest crust, use panko and make sure the pan is hot before adding the patties. If the mixture feels too wet to shape, chill it for 10 minutes first.
