Method
- Mix the drained salmon, egg, breadcrumbs, shallot, parsley, Dijon, lemon zest, salt, and pepper in a bowl with a fork until just combined.
- Divide into 4 portions and shape into ¾-inch-thick patties with damp hands.
- Heat olive oil in a nonstick skillet over medium-high. Cook patties 3 to 4 minutes per side until deeply golden and firm.
- Serve on toasted buns with lettuce, tomato, onion, and tartar sauce.
Notes
Nutrition estimate is for the salmon patty only, without bun or toppings. For firmer patties that are easier to flip, chill the shaped patties for 15 to 30 minutes before frying, though it is not required.
