Method
- Melt the butter in a large skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, for 8-10 minutes until golden and tender.
- Add the onion and cook 3-4 minutes until softened and starting to brown.
- Break the corned beef into chunks and add to the skillet with the Worcestershire sauce and black pepper. Press into an even layer and cook undisturbed for 5-6 minutes until a crust forms. Flip and cook another 2-3 minutes. Taste for salt.
- Fry four eggs in a separate pan, then plate the hash and top each serving with a fried egg.
Notes
If you don’t have Worcestershire, a splash of soy sauce will do. Canned corned beef is already salty, so taste before adding any extra salt. Nutrition values are for the hash alone, without the egg.
