Canned Corned Beef Hash Recipe

Ingredients
  

  • 12 oz canned corned beef
  • 2 medium Yukon Gold potatoes (about 1 lb), diced into ½-inch cubes
  • 1 medium yellow onion, chopped
  • 2 tbsp unsalted butter
  • 1 tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste (optional)

Method
 

  1. Melt the butter in a large skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, for 8-10 minutes until golden and tender.
  2. Add the onion and cook 3-4 minutes until softened and starting to brown.
  3. Break the corned beef into chunks and add to the skillet with the Worcestershire sauce and black pepper. Press into an even layer and cook undisturbed for 5-6 minutes until a crust forms. Flip and cook another 2-3 minutes. Taste for salt.
  4. Fry four eggs in a separate pan, then plate the hash and top each serving with a fried egg.

Notes

If you don’t have Worcestershire, a splash of soy sauce will do. Canned corned beef is already salty, so taste before adding any extra salt. Nutrition values are for the hash alone, without the egg.
