Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 (4 oz) can diced green chiles
  • 1 lb cooked chicken, shredded
  • 2 (15 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 4 oz cream cheese, softened and cut into cubes
  • 1 cup frozen corn
  • Kosher salt and black pepper, to taste
  • Juice of 1 lime
  • For serving: chopped cilantro, sliced jalapeƱos, crushed tortilla chips, sour cream

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper with a pinch of salt, and cook until softened, about 5 minutes. Add the garlic and cook 30 seconds.
  2. Stir in the Cajun seasoning and green chiles, then add the chicken, beans, and broth. Bring to a boil, reduce to a simmer, and cook uncovered for 15 minutes.
  3. Drop in the cream cheese and stir until melted, about 2 minutes. Add the corn and simmer 5 minutes more. Season with salt and pepper to taste.
  4. Remove from heat, stir in the lime juice, and ladle into bowls. Top with cilantro, jalapeƱos, chips, and sour cream.

Notes

This chili thickens as it sits, so add a splash of broth when reheating. For a chunkier texture, tear the chicken into larger pieces instead of finely shredding it.
