- Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper with a pinch of salt, and cook until softened, about 5 minutes. Add the garlic and cook 30 seconds.
- Stir in the Cajun seasoning and green chiles, then add the chicken, beans, and broth. Bring to a boil, reduce to a simmer, and cook uncovered for 15 minutes.
- Drop in the cream cheese and stir until melted, about 2 minutes. Add the corn and simmer 5 minutes more. Season with salt and pepper to taste.
- Remove from heat, stir in the lime juice, and ladle into bowls. Top with cilantro, jalapeƱos, chips, and sour cream.
Notes
This chili thickens as it sits, so add a splash of broth when reheating. For a chunkier texture, tear the chicken into larger pieces instead of finely shredding it.
