Cajun Turkey Breast Recipe

Ingredients
  

  • 1 bone-in, skin-on turkey breast (about 3 lbs)
  • 4 tbsp unsalted butter, softened
  • 2 tbsp Cajun seasoning
  • 1 tsp kosher salt (optional, if seasoning is salt-free)
  • 1 tbsp olive oil

Method
 

  1. Mix the butter, Cajun seasoning, and salt until a smooth paste forms.
  2. Loosen the turkey skin and spread three-quarters of the butter mixture under the skin, then rub the rest over the outside and coat with olive oil.
  3. Let turkey rest at room temperature 15 minutes, then roast at 400°F for 20 minutes, reduce heat to 350°F, and continue roasting 35 to 45 minutes until the thickest part reads 160°F.
  4. Rest the breast 10 minutes under foil, then slice and serve with pan juices.

Notes

If your Cajun blend is very dark, watch the skin color during the high-heat roast; a loose foil tent after the first 30 minutes prevents bitter blackening. For a spicier finish, add a pinch of extra cayenne to the butter.
