Method
- Mix the butter, Cajun seasoning, and salt until a smooth paste forms.
- Loosen the turkey skin and spread three-quarters of the butter mixture under the skin, then rub the rest over the outside and coat with olive oil.
- Let turkey rest at room temperature 15 minutes, then roast at 400°F for 20 minutes, reduce heat to 350°F, and continue roasting 35 to 45 minutes until the thickest part reads 160°F.
- Rest the breast 10 minutes under foil, then slice and serve with pan juices.
Notes
If your Cajun blend is very dark, watch the skin color during the high-heat roast; a loose foil tent after the first 30 minutes prevents bitter blackening. For a spicier finish, add a pinch of extra cayenne to the butter.
