- Preheat oven to 425°F. Toss chicken and sausage with 2 tbsp oil and 2 tbsp Cajun seasoning in a large bowl.
- Arrange meat on a sheet pan. Toss peppers and onion in the same bowl with remaining 1 tbsp oil and a pinch of salt, then scatter around the meat.
- Roast for 22 to 25 minutes, until chicken reaches 165°F and vegetables are charred at the edges.
- Squeeze lemon over everything, sprinkle with parsley, and serve immediately, scraping up the pan drippings.
Notes
If you want a heavier char on the vegetables, turn on the broiler for the last 2 minutes and watch carefully. For extra juicy chicken, let the thighs come to room temperature for 15 minutes before roasting.
