Cajun Pasta Salad Recipe

Ingredients
  

  • 8 oz rotini pasta
  • 8 oz andouille sausage, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 celery ribs, diced
  • ¼ cup diced red onion
  • 2 green onions, sliced
  • ½ cup mayonnaise
  • 2 tbsp Creole mustard
  • 1 tbsp apple cider vinegar
  • 1 ½ tbsp Cajun seasoning
  • ½ tsp garlic powder
  • Salt and black pepper to taste

Method
 

  1. Bring a pot of salted water to a boil and cook rotini for 10 minutes until al dente. Drain and rinse under cold water, then drain well.
  2. While the pasta cooks, sear the sliced sausage in a skillet over medium-high heat for 4 to 5 minutes until browned and crisp. Transfer to a plate to cool.
  3. In a large bowl, whisk together mayo, mustard, vinegar, Cajun seasoning, garlic powder, salt, and pepper until smooth.
  4. Add the pasta, sausage, bell peppers, celery, red onion, and most of the green onions to the dressing. Toss for 1 minute until everything is coated. Serve now or chill for later; top with remaining green onions.

Notes

The salad tastes even better after an hour in the fridge. If it thickens after chilling, stir in a spoonful of mayo or a splash of milk before serving to loosen it up. Undressed components can be prepped a day ahead and combined an hour before you plan to eat.
