- Pound the chicken breasts between plastic wrap to an even ½-inch thickness.
- Mix the smoked paprika, garlic powder, onion powder, thyme, cayenne, brown sugar, salt, and pepper in a small bowl. Pat chicken dry, drizzle with olive oil, and rub the spice blend all over.
- Heat a skillet over medium-high heat. Add the chicken and cook undisturbed for about 5 minutes until deeply golden, then flip and cook another 4-5 minutes until the internal temperature reaches 160°F (71°C).
- Transfer to a cutting board, rest for 5 minutes, then slice against the grain and serve with pan drippings.
Notes
Resting the chicken for 5 minutes before slicing is essential for keeping it juicy. If you use store-bought Cajun seasoning, skip the extra salt as most blends are already well salted.
