Cajun Alfredo Pasta Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 2 tbsp Cajun seasoning, divided
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup diced yellow onion
  • 1/2 cup diced bell pepper
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 oz penne pasta
  • Salt and black pepper
  • Chopped fresh parsley, for serving

Method
 

  1. Season chicken strips with 1 tbsp Cajun seasoning, salt, and pepper. Start boiling pasta water. Sear chicken in olive oil over medium-high heat, about 4 minutes per side, then set aside.
  2. Melt butter in the same skillet. Sauté onion and bell pepper with a pinch of salt for 4 minutes. Add garlic and cook 30 seconds.
  3. Pour in heavy cream and the remaining 1 tbsp Cajun seasoning. Simmer gently, then stir in Parmesan over low heat until smooth, about 2 minutes.
  4. Cook pasta al dente, drain (reserving 1/2 cup pasta water), and add to the skillet with the chicken. Toss to coat, adding pasta water as needed. Serve with fresh parsley.

Notes

Reserve a little pasta water before draining. A splash stirred in at the end keeps the sauce silky and loosens it if it thickens too much.
