Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 lb total)
  • ½ cup creamy Caesar dressing, divided
  • 1 lemon, juiced and divided
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • ¼ cup chicken broth
  • ¼ cup grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high. Season chicken with salt and pepper, then sear 4 minutes per side until golden. Remove to a plate; it won’t be done yet.
  2. Reduce heat to medium. Add garlic and cook 30 seconds. Stir in chicken broth, juice of half the lemon, and ¼ cup Caesar dressing. Simmer until bubbly.
  3. Return chicken and collected juices to pan. Spoon sauce over top and simmer 3 to 5 minutes until chicken reaches 165°F and sauce thickens.
  4. Off heat, slice chicken against the grain. Stir remaining lemon juice and Parmesan into the sauce, spoon over chicken, and serve with extra Parmesan.

Notes

For deeper flavor, marinate the chicken in ¼ cup Caesar dressing, a tablespoon of lemon juice, and the garlic for 30 minutes before cooking. Pat dry before searing so it browns properly.
