Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups thinly sliced green cabbage
  • 1 cup shredded carrot
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, for serving

Method
 

  1. Heat oil in a large pot over medium-high heat. Add beef and onion; brown while breaking up the meat, 6 to 8 minutes.
  2. Stir in garlic and tomato paste; cook 1 minute until fragrant and darkened.
  3. Add broth, diced tomatoes with their juices, paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.
  4. Add cabbage and carrot, stir to submerge, and simmer until cabbage is tender, 8 to 10 minutes. Adjust salt and pepper to taste.
  5. Ladle into bowls and top with parsley. Serve hot.

Notes

The soup will thicken as it sits because the cabbage keeps releasing starch. When reheating leftovers, add a little broth or water to loosen it to your liking.
