Ingredients
  

  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and sliced into thin rounds
  • 2 celery stalks, sliced thin
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 small head green cabbage, cored and roughly chopped (about 6 cups)
  • 1 (14.5 oz) can diced tomatoes, with their juices
  • 6 cups low-sodium vegetable or chicken broth
  • 1 bay leaf
  • 1 tsp smoked paprika
  • 1 tsp kosher salt, plus more to taste
  • ½ tsp black pepper
  • Juice of half a lemon
  • Fresh parsley or dill, for serving

Method
 

  1. Heat oil in a large pot over medium heat. Add onion, carrot, celery, and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes.
  2. Stir in garlic and smoked paprika; cook 30 seconds. Add broth, tomatoes, cabbage, and bay leaf. Bring to a boil, then reduce heat to a steady simmer.
  3. Cover partially and simmer 25 to 30 minutes, until cabbage is tender. Stir in salt and pepper.
  4. Remove bay leaf, stir in lemon juice, and adjust seasoning. Ladle into bowls and top with fresh herbs.

Notes

The soup tastes even better the next day, so making it ahead is a smart move. If you like more heat, add a pinch of red pepper flakes with the broth.
