Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small head green cabbage (about 1 lb), cored and thinly sliced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp brown sugar, optional
  • Chopped fresh parsley or dill, for serving

Method
 

  1. Heat olive oil in a large skillet over medium-high. Add beef, break it apart, and brown for 5 to 7 minutes.
  2. Push beef aside, add onion, and cook until soft, about 3 minutes. Stir in garlic and cook 30 seconds.
  3. Add cabbage, paprika, salt, and pepper. Toss and cook 5 to 6 minutes until cabbage wilts.
  4. Stir in tomato sauce, diced tomatoes with their juices, Worcestershire, and brown sugar. Bring to a simmer, cover, and cook 10 minutes until cabbage is tender.
  5. Taste and adjust salt. Spoon into bowls and top with parsley or dill.

Notes

Brown the beef in an even layer for the best flavor; resist stirring too early. The optional brown sugar balances acidity but is not necessary, especially if your tomato sauce is naturally sweet. Any leftovers thicken overnight, so reheat with a splash of water or broth.
