- Heat olive oil in a large skillet over medium-high. Add beef, break it apart, and brown for 5 to 7 minutes.
- Push beef aside, add onion, and cook until soft, about 3 minutes. Stir in garlic and cook 30 seconds.
- Add cabbage, paprika, salt, and pepper. Toss and cook 5 to 6 minutes until cabbage wilts.
- Stir in tomato sauce, diced tomatoes with their juices, Worcestershire, and brown sugar. Bring to a simmer, cover, and cook 10 minutes until cabbage is tender.
- Taste and adjust salt. Spoon into bowls and top with parsley or dill.
Notes
Brown the beef in an even layer for the best flavor; resist stirring too early. The optional brown sugar balances acidity but is not necessary, especially if your tomato sauce is naturally sweet. Any leftovers thicken overnight, so reheat with a splash of water or broth.
