Cabbage Roll Casserole Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 small head green cabbage (about 1.5 lbs), shredded
  • 2 cups cooked white rice
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup beef broth
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Method
 

  1. Preheat oven to 375°F. In a large oven-safe skillet, heat oil over medium-high. Add beef and onion, cook until beef is browned, about 8 minutes. Stir in garlic, cook 1 minute, then drain fat.
  2. Add cabbage, salt, pepper, and paprika. Cook, stirring, until cabbage softens, about 5 minutes.
  3. Stir in tomato sauce, diced tomatoes, broth, brown sugar, vinegar, and Worcestershire. Simmer 2 minutes.
  4. Remove from heat. Fold in rice. If skillet is not oven-safe, transfer to a greased 9x13 dish. Cover with foil, bake 30 minutes. Uncover, bake another 15 to 20 minutes until bubbly and top is lightly caramelized.
  5. Rest 5 minutes, then spoon into bowls. Serve hot.

Notes

Let the casserole sit a few minutes after baking so it sets up a bit. The leftovers only get better the next day.
