- Melt 2 tbsp butter in a large skillet over medium heat. Add onion and a pinch of salt; cook 8 minutes until softened and starting to brown.
- Add cabbage in handfuls, seasoning with salt and pepper. Cook, stirring occasionally, for 15 to 20 minutes until tender and golden.
- Meanwhile, boil noodles in salted water until al dente. Drain, reserving 1/2 cup pasta water.
- Add noodles, 1/4 cup pasta water, and remaining butter to the skillet. Toss over medium heat for 2 minutes until glossy and hot.
- Pile onto a platter, scraping up browned bits. Finish with more pepper and a pinch of flaky salt.
Notes
If the skillet seems dry while the cabbage cooks, add a small splash of water. The finished dish tastes even better the next day, so do not hesitate to make extra. Keep a close eye on the heat in the final toss; you want the butter to melt but not separate.
