Cabbage and Noodles Recipe

Ingredients
  

  • 4 tbsp unsalted butter, divided
  • 1 medium yellow onion, sliced thin
  • 1 small green cabbage (about 1.5 lbs), cored and thinly sliced
  • 8 oz wide egg noodles
  • Salt and freshly ground black pepper

Method
 

  1. Melt 2 tbsp butter in a large skillet over medium heat. Add onion and a pinch of salt; cook 8 minutes until softened and starting to brown.
  2. Add cabbage in handfuls, seasoning with salt and pepper. Cook, stirring occasionally, for 15 to 20 minutes until tender and golden.
  3. Meanwhile, boil noodles in salted water until al dente. Drain, reserving 1/2 cup pasta water.
  4. Add noodles, 1/4 cup pasta water, and remaining butter to the skillet. Toss over medium heat for 2 minutes until glossy and hot.
  5. Pile onto a platter, scraping up browned bits. Finish with more pepper and a pinch of flaky salt.

Notes

If the skillet seems dry while the cabbage cooks, add a small splash of water. The finished dish tastes even better the next day, so do not hesitate to make extra. Keep a close eye on the heat in the final toss; you want the butter to melt but not separate.
