Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small green cabbage, about 2 lbs, shredded
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • Salt and black pepper

Method

  1. Heat oil in a large skillet over medium-high. Brown beef, breaking it up, until no pink remains, 5-7 minutes. Drain all but 1 tbsp fat.
  2. Reduce heat to medium, add onion, and cook until soft, 3-4 minutes. Stir in garlic, tomato paste, and paprika; cook 1 minute.
  3. Add cabbage, tomatoes with juices, broth, and Worcestershire. Cover and cook 8-10 minutes until cabbage is tender, then uncover and cook 2 minutes to reduce liquid.
  4. Remove from heat. Stir in vinegar, season with salt and pepper, and serve hot.

Notes

For a little extra kick, add a pinch of red pepper flakes with the paprika. If you want a saucier dish, pour in an extra splash of broth right before serving. This skillet is also excellent spooned over steamed rice or buttered egg noodles.
