Ingredients
Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment. Whisk flour, baking powder, and salt. Beat butter, granulated sugar, and brown sugar until fluffy, then beat in egg and vanilla. Mix in dry ingredients just until combined.
- In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, vanilla, and salt. Bring to a gentle bubble, remove from heat, and stir in pecans. Cool for 15 minutes.
- Scoop dough into 1 1/2-tablespoon balls and place on sheets. Press a deep well into each ball, leaving a 1/4-inch thick bottom.
- Spoon 1 heaping teaspoon of cooled pecan topping into each well, mounding slightly and keeping syrup away from the edges.
- Bake for 10 to 12 minutes until edges are golden and centers look set. Cool on the sheet for 5 minutes, then move to a wire rack to cool completely.
Notes
These cookies taste even better the next day after the flavors meld. The topping will seem soft when they come out of the oven but sets as they cool, so let them rest on the rack until completely firm.
