Haluski Fried Cabbage and Noodles

Buttery Haluski Recipe

Ingredients
  

  • 4 tbsp unsalted butter
  • 1 large yellow onion
  • 1 small green cabbage (about 2 lbs)
  • 1 tsp caraway seeds
  • 8 oz wide egg noodles
  • 1 tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. Melt 3 tbsp butter in a large skillet over medium heat. Add the sliced onion and cook 4 minutes until softened, then stir in the cabbage, salt, pepper, and caraway seeds if using. Cook 15 to 20 minutes, stirring occasionally, until tender and golden.
  2. Meanwhile, boil the egg noodles in salted water until just al dente, about 6 to 8 minutes. Drain.
  3. Add the drained noodles and remaining 1 tbsp butter to the skillet. Toss over medium heat for 1 to 2 minutes until the noodles are coated and heated through.
  4. Spoon into bowls, top each with a small pat of butter and a grind of fresh pepper, and serve hot.

Notes

If using caraway, add it with the cabbage. For deeper caramelization, let the cabbage fry an extra few minutes until the edges are almost charred. Leftovers reheat well in a skillet.
