- Pat the chicken dry and season both sides with salt. Let sit 5 minutes at room temperature.
- Heat a skillet over medium-high heat, melt 1 tbsp butter, and sear the chicken undisturbed for 4 to 5 minutes until deeply golden.
- Flip, add the remaining 1 tbsp butter, and baste continuously for 3 to 4 minutes or until the thickest part reaches 160°F. Rest 2 minutes, then slice and spoon the pan butter over.
Notes
For the most even cooking, use a meat mallet or heavy pan to pound the breasts to a consistent thickness before seasoning. If your butter is unsalted, add a slightly heavier hand with the salt.
