- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are fine.
- Heat a nonstick skillet over medium heat, butter it lightly, and pour ¼ cup batter per pancake. Cook until bubbles appear on top, 2 to 3 minutes, then flip and cook 1 to 2 minutes more.
- Stack pancakes on plates and serve right away with butter and maple syrup.
Notes
Letting the batter rest for 5 minutes before cooking results in slightly taller pancakes. If the skillet gets too hot between batches, lower the flame for 30 seconds before adding more batter.
