- Place potatoes in a large pot, cover with cold water by 1 inch, stir in 1 tsp salt. Boil, then simmer until fork-tender, 12 to 15 minutes.
- Drain potatoes, return to pot over low heat, and dry for 1 to 2 minutes, shaking occasionally.
- Add butter and mash until melted. Gradually stir in buttermilk until smooth and creamy.
- Season with remaining ½ tsp salt and pepper, adjust to taste, and serve hot with a pat of butter.
Notes
For the smoothest texture, press the potatoes through a ricer before folding in the butter and buttermilk. Buttermilk should be at room temperature so the mash stays hot and the butter doesn’t seize.
