Ingredients
  

  • 2 cups buttermilk
  • 1 tablespoon hot sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 lbs boneless skinless chicken

Method
 

  1. Whisk buttermilk, hot sauce, salt, paprika, garlic powder, and pepper in a large bowl until smooth.
  2. Add the chicken and turn to coat. Cover and refrigerate 2 to 24 hours.
  3. Remove chicken from marinade, shake off excess, and pat lightly dry if you want a crispier crust. Heat a skillet with oil over medium-high, add chicken without crowding, and cook 4 to 5 minutes per side until deeply golden and 165°F inside.
  4. Rest on a board 5 minutes, slice against the grain, and serve with pan drippings.

Notes

Marinating time is not included in the prep or cook totals. For the juiciest result, give it at least 2 hours and pull the chicken from the fridge about 20 minutes before cooking so it loses some chill.
