Method
- Preheat oven to 350°F (175°C). Pat the turkey dry and let it stand at room temperature. Mix olive oil with salt, pepper, garlic powder, onion powder, and paprika.
- Place the turkey on a rack in a roasting pan. Rub butter under and over the skin if using, then coat with the seasoning mixture. Insert an oven-safe thermometer into the thickest part.
- Roast for about 75 minutes, until the internal temperature reaches 155°F. Baste with pan drippings and continue roasting 10 to 15 minutes more, until the thermometer reads 165°F.
- Rest the roast on a cutting board under foil for 10 minutes. Slice against the grain, spoon any juices over the top, and serve.
Notes
If your roast includes a gravy packet, you can heat it while the turkey rests. The carryover cooking will bring the temperature up a degree or two, so pulling it at 155°F keeps the breast from drying out. The roast is also excellent at room temperature for a buffet.
