Method
- Beat butter and 1 cup sugar with an electric mixer until light and fluffy, about 2 minutes.
- Mix in egg and vanilla, then stir in flour, baking powder, and salt just until no dry spots remain.
- Scoop dough into 1 ½ tablespoon balls, roll in the remaining ⅓ cup sugar, and chill 15 minutes if desired.
- Preheat oven to 350°F. Place sugared dough balls 2 inches apart on parchment-lined sheet. Bake 10 to 12 minutes until edges are golden and centers look set.
- Cool on sheet for 2 minutes, then transfer to a wire rack to cool completely before serving.
Notes
If baking in batches, keep the remaining dough balls in the fridge between rounds. The cookies stay fresh for days, but the sugar crust is crunchiest on the day they’re made.
