Butter Pecan Ice Cream Recipe

Ingredients
  

  • 2 cups heavy cream, cold
  • 1 (14 oz) can sweetened condensed milk
  • 1 tbsp vanilla extract
  • ¼ cup unsalted butter
  • 1 cup pecan halves
  • ¼ tsp fine sea salt

Method
 

  1. Melt the butter in a skillet over medium heat. Add the pecans and a pinch of salt. Cook, stirring, for 3 to 4 minutes until the butter turns golden and the pecans are fragrant. Let cool completely.
  2. Whip the heavy cream to stiff peaks using an electric mixer, about 3 to 4 minutes.
  3. In a large bowl, stir together the sweetened condensed milk, vanilla, and ¼ tsp salt. Fold in the whipped cream gently, then fold in the cooled pecan mixture until evenly distributed.
  4. Transfer to a loaf pan, cover with plastic wrap pressed directly on the surface, and freeze for at least 6 hours. Let soften for 5 minutes at room temperature before scooping.

Notes

The ice cream needs a full 6 hour freeze to set properly, so plan ahead. The pecans will stay crisp at first and soften a little after a few days in the freezer, but the flavor deepens nicely over time.
