Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 8 cups chopped romaine or iceberg lettuce
  • 1 cup halved cherry tomatoes
  • ½ cup thinly sliced red onion
  • ½ cup dill pickle slices
  • 1 cup shredded sharp cheddar cheese
  • ⅓ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp dill pickle brine
  • ½ tsp smoked paprika

Method
 

  1. Whisk together mayonnaise, ketchup, mustard, pickle brine, and smoked paprika. Set aside.
  2. Heat a large skillet over medium-high. Crumble in ground beef and sear 2 minutes without stirring. Break it apart, then cook 5 to 7 minutes until browned, stirring occasionally. Halfway through, stir in Worcestershire, garlic powder, onion powder, salt, and pepper.
  3. Divide lettuce among four bowls. Top with warm beef, tomatoes, red onion, pickles, and cheddar.
  4. Drizzle with the dressing, toss gently, and serve right away.

Notes

The beef is best served hot so the cheese melts slightly. If making ahead, store the components separately and reheat the beef just before assembling. The dressing can be made up to a week in advance.
