Ingredients
  

  • ½ cup all-purpose flour
  • 3 tbsp granulated sugar
  • ½ tsp baking powder
  • ⅛ tsp salt
  • 3 tbsp whole milk, at room temperature
  • 1 ½ tbsp vegetable oil
  • ½ tsp vanilla extract
  • 1 large egg white, at room temperature
  • ¼ cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1-2 tsp milk
  • ¼ tsp vanilla extract
  • Pink gel food coloring
  • 2 small round cookies
  • 4 candy eyes
  • Black writing gel or melted chocolate

Method
 

  1. Heat oven to 350°F (175°C). Grease a 4-inch round pan and line the bottom with parchment.
  2. Whisk the flour, sugar, baking powder, and salt. Add milk, oil, vanilla, and egg white, stir until smooth.
  3. Pour batter into the pan and bake 20-24 minutes until a toothpick comes out clean. Cool 10 minutes in the pan, then transfer to a rack to cool completely.
  4. Beat the butter until pale, then beat in powdered sugar, 1 tsp milk, and vanilla. Tint pink with food coloring, adding extra milk if needed for spreadability.
  5. Spread the pink buttercream on the cooled cake. Press candy eyes and two cookies in for ears.
  6. Pipe a pink nose and draw whiskers and a mouth with black gel. Serve or chill.

Notes

Cool the cake fully before frosting or the buttercream will slide off. If the cookies are soft, toast them in a 300°F oven for 5 minutes and let them crisp up before using as ears.
