Buffalo Pasta Salad Recipe

Ingredients
  

  • 8 oz rotini or elbow pasta
  • 2 cups cooked shredded chicken
  • 2 large celery ribs, finely diced
  • 1 large carrot, shredded or julienned
  • 1/2 cup crumbled blue cheese
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup buffalo wing sauce
  • 1 tbsp white vinegar
  • 1 tsp garlic powder
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. Cook the pasta in salted water until al dente. Drain, rinse with cold water, and shake off the excess.
  2. Whisk the mayonnaise, sour cream, buffalo sauce, vinegar, garlic powder, salt, and pepper until smooth.
  3. In a large bowl, combine the cooled pasta, chicken, celery, carrot, and half the blue cheese. Pour the dressing on top and fold until evenly coated.
  4. Cover and refrigerate for at least 30 minutes. Stir, then top with the remaining blue cheese and sliced green onions just before serving.

Notes

Chill the salad for 30 minutes before serving to let the flavors blend and the vegetables stay crisp. Rotisserie chicken makes this extra quick on a busy weeknight.
