- Melt the butter in a small saucepan over medium heat, then stir in the hot sauce until smooth. Set aside.
- Pat the chickpeas dry and cook in oil over medium-high heat for 4 to 5 minutes until golden and blistered.
- Pour the warm buffalo sauce into the skillet and toss until every chickpea is coated, about 30 seconds.
- Spread ranch on each tortilla, layer on lettuce, celery, onion, and chickpeas.
- Fold, toast in the same skillet for 1 to 2 minutes per side, then slice and serve warm.
Notes
If you want extra crunch, you can toast the tortillas briefly before you assemble them, then fill and serve without a second toasting. The filling also tastes great cold straight from the fridge on a salad.
