Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 tbsp unsalted butter
  • 3 tbsp cayenne pepper hot sauce
  • 1 tbsp neutral oil
  • 4 large (10-inch) flour tortillas
  • 1 cup shredded iceberg lettuce
  • 1/2 cup thinly sliced celery
  • 1/4 cup thinly sliced red onion (optional)
  • 1/2 cup ranch dressing

Method

  1. Melt the butter in a small saucepan over medium heat, then stir in the hot sauce until smooth. Set aside.
  2. Pat the chickpeas dry and cook in oil over medium-high heat for 4 to 5 minutes until golden and blistered.
  3. Pour the warm buffalo sauce into the skillet and toss until every chickpea is coated, about 30 seconds.
  4. Spread ranch on each tortilla, layer on lettuce, celery, onion, and chickpeas.
  5. Fold, toast in the same skillet for 1 to 2 minutes per side, then slice and serve warm.

Notes

If you want extra crunch, you can toast the tortillas briefly before you assemble them, then fill and serve without a second toasting. The filling also tastes great cold straight from the fridge on a salad.
