Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
  • 1/4 cup buffalo-style hot sauce
  • 2 tbsp unsalted butter, melted
  • 8 small flour or corn tortillas
  • 2 cups shredded green cabbage
  • 1 carrot, shredded
  • 1 celery stalk, thinly sliced
  • 1/4 cup blue cheese dressing
  • 1/4 cup crumbled blue cheese

Method
 

  1. Sear the chicken in a lightly oiled skillet over medium-high heat, turning occasionally, until golden and cooked through, about 6 to 8 minutes.
  2. Whisk buffalo sauce and melted butter together, then pour over the chicken in the skillet. Stir over low heat for 1 minute until glossy and warm.
  3. Combine cabbage, carrot, celery, and blue cheese dressing in a bowl; toss until evenly coated, about 20 seconds.
  4. Warm tortillas in a dry skillet 30 seconds per side, then fill with buffalo chicken, slaw, and crumbled blue cheese. Serve right away.

Notes

If you’re using rotisserie chicken, skip the sear and just warm the shredded meat in the skillet with the sauce. The slaw softens slightly as it sits—give it 5 minutes if you can, but it’s still crisp right away.
