Method
- Preheat oven to 400°F (200°C). Halve peppers lengthwise, remove seeds and membranes. Arrange in a baking dish, drizzle with oil, season with salt and pepper, and bake 5 minutes.
- Combine chicken, buffalo sauce, cream cheese, and 3/4 cup cheddar in a bowl. Stir until creamy and evenly coated.
- Spoon filling into peppers, mound slightly, and top with remaining 1/4 cup cheddar. Bake 20 to 25 minutes until peppers are tender and cheese is bubbly and browned.
- Remove from oven, scatter blue cheese crumbles on top, let soften 1 minute, then garnish with green onions. Serve warm.
Notes
If you like more heat, use a spicier buffalo sauce or stir a pinch of cayenne into the filling. The peppers are creamiest right out of the oven while the cheese is still gooey.
