- Preheat oven to 350°F (175°C). Line an 8-inch square metal pan with parchment paper.
- In a large bowl, melt the butter, then whisk in the sugar and cocoa powder until thick and glossy.
- Whisk in the eggs one at a time, then the vanilla, until smooth.
- Fold in the flour, salt, and espresso powder (if using) just until no dry streaks remain.
- Spread the batter into the pan, smooth the top, and bake for 20 to 25 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 30 minutes, lift out using the parchment, and slice into 16 squares.
Notes
For the fudgiest texture, let the brownies cool completely before slicing; they’re even better the next day. If you use a glass pan, expect a slightly longer bake time.
