Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Stir brownie mix, eggs, and oil until smooth. Fold in chocolate chips if using.
- Scoop tablespoonfuls of dough 2 inches apart on the sheet. Bake 10 to 12 minutes until edges set and tops crackle.
- Cool on the sheet 2 minutes, then transfer to a wire rack. Serve warm or cooled.
Notes
The dough thickens as it sits, so bake the first batch right away. For an even richer cookie, swap the oil with melted and slightly cooled butter. Any extra chips you add will give larger chocolate pockets, but no need to go over 3/4 cup total.
