Ingredients
  

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1¼ cups powdered sugar
  • ½ tsp vanilla extract
  • Fresh fruit (strawberries, blueberries, kiwi, raspberries, etc.)

Method
 

  1. Preheat oven to 350°F and grease a 12-inch round pizza pan. Whisk melted butter and sugar, then beat in eggs and vanilla until glossy.
  2. Stir in cocoa, flour, and salt until just combined. Spread into the pan and bake 20 to 22 minutes until set. Cool completely.
  3. Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla. Whip until fluffy.
  4. Spread frosting over the cooled brownie, leaving a border. Arrange fresh fruit on top in a pattern.
  5. Transfer to a cutting board and slice into wedges with a pizza cutter or sharp knife. Serve immediately.

Notes

Cool the brownie completely before frosting, which takes about an hour on a wire rack. If you like a glossier fruit finish, brush the top lightly with warmed apricot jam after assembling. Leftovers keep in the refrigerator for up to three days, though the fruit texture softens over time.
