Brownie Date Balls Recipe

Ingredients
  

  • 1 cup whole raw almonds or walnuts
  • 10 large Medjool dates, pitted
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Pinch of fine sea salt
  • 2 tbsp cocoa powder or shredded coconut, for rolling (optional)

Method
 

  1. Pulse the almonds and salt in a food processor until finely ground, about 1 minute. Scrape down the bowl.
  2. Add the dates, 3 tbsp cocoa powder, and vanilla. Process in bursts, scraping often, until the dough holds together when pinched, about 45 seconds.
  3. Roll level tablespoons of dough into 1-inch balls. Toss in the extra cocoa or coconut, if using, and chill before serving.

Notes

Chill the balls for at least 15 minutes before eating so they firm up and the chocolate flavor settles. If your dates are dry, soak them briefly and drain well before blending.
