Method
- Melt butter in a bowl, whisk in cocoa until smooth, and let cool.
- Beat eggs and granulated sugar with a hand mixer until thick and pale, about 3 minutes. Beat in vanilla.
- Gently fold the chocolate mixture into the egg foam, then sift in flour, baking powder, and salt and fold until just combined.
- Cover dough and refrigerate at least 1 hour until firm.
- Preheat oven to 350°F (175°C). Scoop chilled dough, roll into balls, coat thickly in powdered sugar, and place on parchment-lined sheets. Bake 11 to 13 minutes per sheet until tops are crackled. Cool on the sheet 3 minutes, then transfer to a rack.
Notes
The dough needs at least an hour in the fridge. If you want to plan ahead, chill it overnight and scoop the next day. The cookies will keep well in an airtight container for several days, and they taste just as fudgy at room temperature.
