Method
- Melt the butter and chocolate together in a heatproof bowl using 20-second microwave bursts or a double boiler; let cool slightly.
- In a mixing bowl, beat the sugar and eggs on high speed for 3 to 4 minutes until thick, pale, and ribbon-like.
- Fold the cooled chocolate mixture and vanilla into the egg mixture, then sift in the flour, cocoa powder, baking powder, and salt, folding just until combined.
- Scoop 2-tbsp mounds onto parchment-lined baking sheets and bake at 350°F (175°C) for 9 to 10 minutes. Cool on the sheet for 5 minutes before transferring to a rack.
Notes
For the most dramatic crackly tops, chill the scooped dough for 30 minutes before baking. Warm them in the microwave for 10 seconds before serving if you like the centers extra gooey.
