Method
- Melt the butter and chocolate together in the microwave in 20-second bursts, stirring until smooth. Let cool for 5 minutes.
- Whisk the sugar into the chocolate mixture, then add the eggs one at a time and the vanilla.
- Whisk the flour, cocoa powder, and salt in a small bowl, then fold them into the wet mixture just until no dry streaks remain.
- Scrape the batter onto a parchment-lined half-sheet pan and spread it very thin, about 1/8 inch thick. Sprinkle with chocolate chips if using.
- Bake at 325°F for 18 to 22 minutes, until the edges are deep brown and the center feels firm. Cool completely on the pan.
- Break the cooled sheet into shards and serve.
Notes
The brittle must cool fully on the baking sheet before you break it, it finishes crisping as it sits. On humid days, tuck a silica packet or a few dry rice grains into the storage container to keep it from softening.
