Ingredients
  

  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Whisk melted butter and both sugars until glossy, then whisk in egg, yolk, vanilla, and milk until smooth.
  2. Sift in cocoa, flour, baking powder, and salt, then stir with a spatula until just combined.
  3. Fold in the chocolate chips until evenly mixed.
  4. Scoop heaping tablespoons of dough onto sheets, spacing 2 inches apart. Bake 10 minutes until tops are crackly and edges set. Cool on sheets 5 minutes, then transfer to a rack.

Notes

Underbaking is key—the centers should look slightly wet when you pull them from the oven. They will finish setting as they cool. If your kitchen is warm, a 10-minute dough chill makes scooping easier. Store baked cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
